Garden Grove and neighboring Westminster form the largest Vietnamese community outside Vietnam, and pho is the front door. Brookhurst Street and Westminster Avenue are lined with shops that have been perfecting one broth for thirty years.
Order pho tai if you want rare steak that cooks in the bowl, pho dac biet if you want everything, and pho ga if you want the lighter chicken version. Ask for the broth first, taste it before you add anything, and only then reach for the hoisin and sriracha — the good shops don't need it.
The plate of herbs is not garnish. Tear the Thai basil, squeeze the lime, add the bean sprouts in handfuls so the broth stays hot. Culantro, if it shows up, is the sharper cousin of cilantro and belongs in the bowl.
Best times: pho is a breakfast food here. Shops open early and the broth is freshest before noon. Weekend mornings are busy and worth it.
Don't stop at pho. Bun bo Hue is spicier and heartier, banh canh is thicker, and hu tieu is the southern noodle soup that regulars order when they want something lighter.
